Ingredients

1 x 250g pkt rice stick noodles

1 bunch English spinach, ends trimmed, washed, dried, shredded

2 teaspoons vegetable oil

Salt & freshly ground black pepper
Method

1Cook the noodles in a large saucepan of salted boiling water for 1 minute. Add the spinach and cook for a further 1 minute or until spinach wilts and noodles are tender.

2Drain the noodle mixture and return to the pan. Add the oil and gently toss to combine. Divide wilted spinach noodles among serving bowls and season with salt and pepper. Serve immediately with the protein of your choice. (See notes)
