Ingredients

4 large silver beet leaves, washed, well dried

250g green cabbage, hard core removed

175g Tuscan cabbage, washed, well dried

1 tablespoon extra virgin olive oil

4 garlic cloves, crushed
Method

1Cut the silver beet into 2cm-wide strips crossways. Finely shred the combined cabbage. Combine the silver beet and combined cabbage in a large bowl.

2Heat the olive oil in a large, deep frying pan over medium heat. Add the garlic and cook for 30 seconds or until aromatic.

3Add half the cabbage mixture to the pan. Using two wooden spoons to toss the vegetables, cook for 3 minutes or until just wilted. Transfer to a serving platter. Repeat with remaining cabbage mixture. Season with salt and pepper. Serve.
