Watermelon, guava and lime slushy

  • 1/2 (about 500g) small seedless watermelon, peeled, chopped
  • 1 1/2 cups (375ml) guava juice
  • 1/4 cup (60ml) lime juice
  • 2 tablespoons caster sugar
  • Mint leaves, to serve
  • Lime wedges, to serve

    Place the watermelon in the jug of a blender and blend until smooth. Strain through a fine sieve into a jug. Add the guava, lime juice and sugar and stir until sugar dissolves. Transfer to an airtight container. Place in the freezer for 4 hours or until almost frozen.

    Remove from freezer and quickly break up with a spoon. Transfer to a food processor and process until slushy. Pour evenly among four drink bottles or cups with airtight lids. Return to freezer to set.
