Ingredients

4 desiree potatoes, peeled, cut into 2cm cubes

1 cup (150g) fresh peas or frozen peas

2 sticks celery, trimmed and sliced

1/4 cup (60ml) olive oil

1/4 cup (60ml) lemon juice

Salt & freshly ground pepper

1 tablespoon fresh parsley, chopped

Potato peeler, Strainer, Whisk, Bowls, Saucepan
Method

1Cook potatoes in a saucepan of boiling water for 10-12 minutes, adding peas in the last 5 minutes of cooking or until vegetables are tender. Drain.

2Place potatoes, peas and celery into a serving bowl.

3In a small bowl whisk together olive oil and lemon juice. Season with salt and pepper to taste.

4Pour dressing over potatoes, peas and celery and gently combine. Sprinkle with parsley and toss through. Serve warm.
