Ingredients

1 tablespoon extra virgin olive oil

1 small brown onion, finely chopped

500g beef mince

1 1/4 teaspoons Tuscan seasoning

1/2 large avocado, stone removed, peeled

70g (1/4 cup) Greek-style natural yoghurt

8 flour tortillas

1/2 cos lettuce, leaves shredded

200g tomatoes, coarsely chopped
Method

1Heat the oil in a large non-stick frying pan over medium-high heat. Add the onion and cook, stirring, for 3 minutes or until soft. Add the mince and seasoning. Increase heat to high. Cook, stirring with a wooden spoon to break up any lumps, for 6 minutes or until the mince changes colour.

2Mash the avocado in a small bowl. Stir in the yoghurt. Warm the tortillas following packet directions.

3Transfer the mince mixture to a serving bowl. Serve with avocado mixture, tortillas, lettuce and tomato.
