Turkey fried rice

Ingredients

  • 1 tablespoon vegetable oil
  • 2 eggs, lightly beaten
  • 500g turkey mince
  • 2 garlic cloves, crushed
  • 2 teaspoons grated ginger
  • 3 green onions, thinly sliced
  • 2 cups frozen peas, corn and capsicum
  • 1 1/2 tablespoons soy sauce
  • 4 cups cooked SunRice Naturally Low GI White Rice
  • 2 teaspoons sesame oil

Method

    Heat 1/2 teaspoon of vegetable oil in a large wok over high heat. Pour in half of egg, tilting wok to make a large thin omelette. Cook for 1 minute. Slide onto a clean board. Repeat with another 1/2 teaspoon of vegetable oil and remaining egg to make a second omelette. Roll omelettes and thickly slice.

    Heat remaining vegetable oil in same wok. Stir-fry turkey mince for 2 minutes, breaking up any lumps with spatula. Add garlic, ginger and 2 onions and stir-fry for 3 minutes or until mince is cooked. Add vegetables and soy sauce and stir-fry for 2 minutes or until hot. Add rice and sesame oil and stir-fry for 2 minutes or until hot.

    Serve topped with omelette and remaining onion.
