Tortilla toasties

  • 8 small flour tortillas
  • 1/2 small ripe avocado, peeled, mashed
  • 70g (2/3 cup) finely grated cheddar
  • 16 grape tomatoes, quartered
  • 80g shaved chicken
  • olive oil spray

    Spread 4 small flour tortillas with 1/2 small ripe avocado, peeled, mashed. Top with 35g (1/3 cup) finely grated cheddar, 16 grape tomatoes, quartered, and 80g shaved chicken. Sprinkle with 35g (1/3 cup) finely grated cheddar. Top with 4 small flour tortillas to make 4 stacks.

    Spray a frying pan with olive oil spray to lightly grease. Place over medium heat. Add 1 tortilla stack and cook for 1 1/2 minutes, each side, or until golden and heated through. Transfer to a plate.

    Repeat with remaining tortilla stacks. Cut in half to serve.
