Tomato and olive salad

Ingredients

  • 6 ripe tomatoes, sliced
  • 1 small red onion, finely sliced
  • 2 tablespoon chopped parsley
  • 1/4 cup pitted green olives, halved
  • 2 tablespoon Coles brand Italian red wine vinegar
  • 2 tablespoon extra virgin olive oil

Method

    Arrange tomato slices on a serving platter and top with onion. Scatter parsley and olives over.

    Drizzle vinegar and oil over salad, and season with salt and freshly ground black pepper.
