Ingredients

800g seedless grapes

3/4 cup caster sugar

1/4 cup water

200g low-fat ricotta cheese*

1 tablespoon finely chopped glace ginger
Method

1Remove grapes from stalks. Place grapes onto a lined baking tray.

2Place sugar and water into a small saucepan over low heat. Stir until sugar dissolves, brushing down the side of the saucepan with a wet pastry brush to remove any sugar crystals. Increase heat to high. Bring to the boil. Boil, uncovered, without stirring, for 8 to 10 minutes, or until toffee turns a light golden colour. Pour toffee over grapes. Stand for 5 minutes to cool.

3Using an electric mixer, beat ricotta until almost smooth. Fold through ginger.

4Divide toffeed grapes between 4 serving bowls. Top with ginger ricotta. Serve.
