Ingredients

1/2 cup finely chopped fresh flat-leaf parsley

1/2cup finely chopped fresh mint leaves

1/2 small red onion, finely chopped

1 tomato, seeded, finely chopped

2 sun-dried tomato and basil wraps

1/3 cup low-fat hummus
-
95g can tuna in springwater, drained, flaked

1/2 carrot, grated
-
1 tablespoon finely chopped preserved lemon rind
Method

1Combine parsley, mint, onion and tomato in a bowl. Season with salt and pepper.

2Place wraps on a flat surface. Spread with hummus. Divide tabouleh, tuna, carrot and preserved lemon between wraps.

3Roll up wraps tightly to enclose filling. Serve, or pack and refrigerate until required.
