Tabouleh, tuna and hummus wrap

  • 1/2 cup finely chopped fresh flat-leaf parsley
  • 1/2cup finely chopped fresh mint leaves
  • 1/2 small red onion, finely chopped
  • 1 tomato, seeded, finely chopped
  • 2 sun-dried tomato and basil wraps
  • 1/3 cup low-fat hummus
  • 95g can tuna in springwater, drained, flaked
  • 1/2 carrot, grated
  • 1 tablespoon finely chopped preserved lemon rind

    Combine parsley, mint, onion and tomato in a bowl. Season with salt and pepper.

    Place wraps on a flat surface. Spread with hummus. Divide tabouleh, tuna, carrot and preserved lemon between wraps.

    Roll up wraps tightly to enclose filling. Serve, or pack and refrigerate until required.
