Sweet potato, goat's cheese & pine nut pizza

  • 440g pkt pizza bases
  • 2 garlic cloves, crushed
  • 60ml (1/4 cup) extra virgin olive oil
  • 430g sweet potato (kumara), peeled, thinly sliced
  • 1 small red onion, halved, thinly sliced
  • 1 tablespoon chopped fresh rosemary
  • 2 tablespoons pine nuts
  • 100g (1 cup) coarsely grated mozzarella
  • 120g soft goat’s cheese, crumbled
  • 150g pkt mixed salad leaves
  • 1 1/2 tablespoons fresh lemon juice

    Preheat oven to 230°C. Place the pizza bases on 2 large baking trays.

    Combine garlic and 3 teaspoons of oil in a bowl. Brush over pizza bases. Combine the sweet potato, onion, rosemary and 3 teaspoons of the remaining oil in a bowl. Spread over the pizza. Sprinkle with the pine nuts, mozzarella and goat’’ cheese. Bake for 12-15 minutes or until the sweet potato is tender.

    Place salad leaves in a bowl. Combine the lemon juice and remaining oil in a jug and pour over salad. Toss to combine. Serve the pizza with salad.
