Ingredients

440g pkt pizza bases

2 garlic cloves, crushed

60ml (1/4 cup) extra virgin olive oil

430g sweet potato (kumara), peeled, thinly sliced

1 small red onion, halved, thinly sliced

1 tablespoon chopped fresh rosemary

2 tablespoons pine nuts

100g (1 cup) coarsely grated mozzarella

120g soft goat’s cheese, crumbled

150g pkt mixed salad leaves

1 1/2 tablespoons fresh lemon juice
Method

1Preheat oven to 230°C. Place the pizza bases on 2 large baking trays.

2Combine garlic and 3 teaspoons of oil in a bowl. Brush over pizza bases. Combine the sweet potato, onion, rosemary and 3 teaspoons of the remaining oil in a bowl. Spread over the pizza. Sprinkle with the pine nuts, mozzarella and goat’’ cheese. Bake for 12-15 minutes or until the sweet potato is tender.

3Place salad leaves in a bowl. Combine the lemon juice and remaining oil in a jug and pour over salad. Toss to combine. Serve the pizza with salad.
