Sweet potato & apple bake

  • 4 Granny Smith apples, peeled, cored, coarsely chopped
  • 250ml (1 cup) apple juice
  • 1.4kg (about 3 large) orange sweet potatoes (kumara), peeled, halved lengthways
  • Melted butter, to grease

    Place the apple and apple juice in a saucepan over medium heat. Cover and bring to a simmer. Cook for 15 minutes or until the apple is very soft. Remove from heat. Stir with a wooden spoon until a coarse puree forms.

    Place the sweet potato in a large saucepan of salted water and bring to the boil. Cook for 10 minutes until slightly tender. Drain. Set aside to cool.

    Preheat oven to 180°C. Brush a 2L (8-cup) capacity glass or ceramic baking dish and a sheet of foil with butter to grease. Cut the sweet potato crossways into thin slices.

    Arrange one-third of the sweet potato over the base of the prepared dish. Season with salt and pepper. Spread half the apple mixture over the sweet potato. Continue layering with the remaining sweet potato and apple, finishing with a layer of sweet potato. Cover the dish with the prepared foil, butter-side down.

    Bake in oven for 30-35 minutes or until the sweet potato is tender. Serve.
