Ingredients

1 garlic clove, crushed

1 teaspoon sesame oil

400g lean beef fillet steak, thinly sliced diagonally

450g fresh rice noodles (see note)

olive oil cooking spray

1 bunch broccolini, trimmed, cut into bite-sized pieces (including stems)

4 green onions, cut into 3cm lengths

1/4 cup thai basil
-
1/4 cup mild chilli sauce

1 tablespoon reduced-salt soy sauce

150g beansprouts, trimmed
Method

1Combine garlic and sesame oil in a ceramic dish. Add beef. Toss to coat. Cover. Refrigerate for 10 minutes. Follow packet directions to separate noodles.

2Heat a wok over high heat until hot. Spray lightly with oil. Add one-quarter of the beef. Stir-fry for 1 minute or until just browned. Remove to a plate. Repeat 3 times with remaining beef and oil if necessary.

3Spray wok with oil again. Add broccolini and onions. Stir-fry for 2 minutes. Add noodles, chilli sauce and soy sauce. Stir-fry for 2 minutes or until noodles are warmed through. Return beef to wok. Stir-fry for 1 to 2 minutes or until heated through. Add beansprouts. Toss to combine. Serve.
