Sticky date cake

  • 340g pkt White Wings Golden Buttercake
  • 300g fresh dates, pitted, chopped
  • 125ml (1/2 cup) boiling water
  • 2 tablespoons brown sugar
  • 1 teaspoon mixed spice
  • Maple syrup, to serve

    Preheat oven to 180°C. Brush a 22cm (base measurement) round cake pan with melted butter. Line pan with non-stick baking paper. Prepare White Wings Golden Buttercake, $2.29, following packet directions to the end of step 2.

    Place dates in a bowl. Cover with boiling water and soak for 10 minutes. Mash. Stir in brown sugar. Fold into cake mixture. Stir in mixed spice. Spoon into prepared pan. Smooth the surface. Bake for 55 minutes or until a skewer inserted into the centre comes out clean. Cool in pan. Serve with maple syrup.
