Spicy lamb burger

Ingredients

  • 500g lamb mince
  • 80ml (1/3 cup) spicy tomato relish
  • 4 ciabatta olive rolls, halved, toasted
  • 75g (1/4 cup) hummus
  • 40g baby rocket leaves
  • 100g fire-roasted peppers, drained, sliced
  • 120g Persian feta, crumbled

Method

    Preheat a barbecue or chargrill on medium-high. Combine mince and relish in a bowl. Season well. Shape into four 2cm-thick patties.

    Cook patties for 4 minutes each side or until just cooked through. Rest for 2 minutes.

    Spread roll bases with hummus. Top with rocket, lamb, peppers and feta. Sandwich with roll tops.
