Ingredients

500g lamb mince

80ml (1/3 cup) spicy tomato relish

4 ciabatta olive rolls, halved, toasted

75g (1/4 cup) hummus

40g baby rocket leaves

100g fire-roasted peppers, drained, sliced

120g Persian feta, crumbled
Method

1Preheat a barbecue or chargrill on medium-high. Combine mince and relish in a bowl. Season well. Shape into four 2cm-thick patties.

2Cook patties for 4 minutes each side or until just cooked through. Rest for 2 minutes.

3Spread roll bases with hummus. Top with rocket, lamb, peppers and feta. Sandwich with roll tops.
