Spiced pear and ginger cheesecakes

  • 1/2 x 250g packet ginger nut biscuits
  • 825g can pear halves in syrup
  • 250g block cream cheese, chopped
  • 1 tablespoon maple syrup
  • 2 teaspoons cinnamon sugar
  • 1/2 cup thickened cream, whipped
  • Chopped crystallised ginger, to serve

    Process biscuits until roughly chopped. Transfer to a bowl.

    Drain pears, reserving 1/3 cup of syrup.

    Process cream cheese, maple syrup, cinnamon sugar and reserved syrup together until smooth and combined. Transfer to a bowl. Fold in whipped cream.

    Spoon half the chopped biscuit among 4 x 1 1/2-cup-capacity serving glasses. Top with half the cream cheese mixture and pears. Dollop with remaining cream cheese mixture. Sprinkle with remaining biscuit. Serve topped with crystallised ginger.
