Smoked salmon with pumpernickel

  • 1/3 cup light spreadable cream cheese
  • 1 tablespoon drained capers, finely chopped
  • 2 teaspoons lime juice
  • 1 tablespoon chopped fresh dill
  • 6 slices wholegrain pumpernickel bread, halved (see note)
  • 50g packet smoked salmon, cut into 12 pieces
  • 1/4 small red onion, cut into thin slivers
  • Extra dill sprigs, to serve (optional)
  • Extra capers, to serve (optional)

    Combine cream cheese, capers, lime juice and dill in a small bowl. Spread evenly over one side of pumpernickel.

    Top with smoked salmon, red onion, and extra dill sprigs and capers. Serve.
