Smoked salmon and potato salad

Ingredients

  • 10 baby coliban potatoes, quartered
  • 80g pkt Fresh baby rocket leaves
  • 1 small red onion, thinly sliced
  • 1/2 cup (90g) drained capers, patted dry with paper towel
  • 200g smoked salmon, cut into strips
  • 80ml Neil Perry Fresh Caesar dressing

Method

    Place the potatoes in a shallow, microwave-safe dish. Add a little water and cook on High/100% power for 4-5 minutes or until tender. Drain well. Set aside to cool slightly.

    Place the rocket, onion, capers and potatoes in a bowl. Toss gently to combine.

    Divide the potato salad and smoked salmon among serving plates. Drizzle with the dressing and serve immediately.
