Silverbeet, chorizo & beans

  • 1 tablespoon olive oil
  • 1 chorizo, thinly sliced
  • 1 brown onion, halved, thinly sliced
  • 2 garlic cloves, crushed
  • 1 bunch silverbeet, stems removed, leaves coarsely chopped
  • 420g can Cannellini Beans, rinsed, drained

    Heat the oil in a large frying pan over medium heat. Cook the chorizo, stirring, for 5 minutes or until crisp and golden. Transfer the chorizo to a plate lined with paper towel.

    Cook the onion and garlic in the pan, stirring, for 3-5 minutes or until soft. Stir in the silverbeet and cannellini beans. Cook, stirring, for 4-5 minutes or until the silverbeet just wilts. Stir in the chorizo for 1 minute or until heated through. Season.
