Sauteed spinach with bacon

Ingredients

  • 1 tablespoon olive oil
  • 2 shortcut rindless bacon rashers, thinly sliced
  • 2 bunches English spinach, trimmed
  • 1/4 cup flaked almonds, toasted

Method

    Heat oil in a frying pan over medium-high heat. Add bacon. Cook for 5 minutes or until crisp. Add spinach. Season with salt and pepper. Cook for 5 to 7 minutes or until spinach has wilted. Add almonds. Toss to combine. Serve.
