Ingredients

1 tablespoon olive oil

500g Coles Italian pork sausages, casings removed

1 medium brown onion, finely chopped

100g sundried tomatoes, from the deli,cut into thirds

1/3 cup dry white wine

1/2 teaspoon dried chilli flakes

80g pitted olives, from the deli, pitted and cut in halves

400g can Italian diced tomatoes, chopped
-
350g Coles penne pasta

2 cloves garlic, finely chopped

Grated parmesan cheese, to serve
Method

1Heat oil over in a large saucepan over medium high heat. Add the sausages, breaking them up into chunks with a wooden spoon, cook for 4-5 minutes or until browned. Add the onion and garlic and cook for 4 minutes, or until softened.

2Add the wine and allow to bubble for 2 minutes. Add the sundried tomatoes, olives, tomatoes and chilli flakes. Season to taste. Simmer for 10 minutes, or until sauce has thickened.

3Meanwhile, cook the penne according to packet directions.
