Sausage antipasto pasta

  • 375g dried tortiglioni pasta
  • Olive oil cooking spray
  • 6 (500g) beef and cracked pepper sausages
  • 1 medium brown onion, halved, thinly sliced
  • 280g jar chargrilled antipasto vegetables, drained
  • 2 cups tomato pasta sauce
  • 1/2 cup chopped fresh basil leaves
  • Shaved parmesan cheese, to serve
  • Small fresh basil leaves, to serve

    Cook pasta in a saucepan of boiling, salted water, following packet directions, until tender. Drain.

    Meanwhile, spray a large frying pan with oil. Heat over medium-high heat. Cook sausages, turning, for 4 to 5 minutes or until browned and just cooked through. Transfer to a chopping board. Thickly slice diagonally.

    Add onion to pan. Cook, stirring, for 3 to 4 minutes or until softened. Add antipasto vegetables, pasta sauce and sausage. Bring to the boil. Reduce heat to low. Simmer for 2 minutes or until heated through. Add basil and pasta. Toss to combine. Top with parmesan and basil. Serve.
