Sausage and pumpkin bake

  • 1kg butternut pumpkin, peeled, cut into 4cm pieces
  • 4 small red onions, quartered
  • 6 garlic cloves, unpeeled
  • 2 tablespoons Alfa One rice bran oil
  • 8 (750g) thick pork sausages
  • 2 tablespoons small fresh basil leaves
  • 1/2 cup shaved parmesan cheese

    Preheat oven to 180°C/160°C fan-forced. Lightly grease a large baking dish.

    Place pumpkin, onion and garlic in prepared dish. Drizzle with oil. Toss to coat. Bake for 30 minutes or until vegetables start to soften.

    Meanwhile, heat a non-stick frying pan over medium heat. Cook sausages, turning, for 5 minutes or until browned.

    Add sausages to pumpkin mixture. Bake for 20 minutes or until pumpkin is tender and sausages cooked through.

    Serve topped with basil and parmesan.
