Sardine bruschetta with kale slaw

Ingredients

  • 1 wholemeal sandwich thin, halved
  • 75g (1 cup) kale slaw, without dressing
  • 1 small tomato, deseeded, coarsely chopped
  • 2 teaspoons fresh lemon juice
  • 105g can sardines in olive oil, drained (see notes)
  • Lemon wedges, to serve

Method

    Toast bread until golden. Combine kale, tomato and lemon juice in a small bowl. Season.

    Top bread with kale mixture and sardines. Serve with lemon wedges.
