Salmon and dill tortillas

  • 2 teaspoons extra virgin olive oil
  • 400g packet Tassal frozen dill and chives salmon burgers
  • 1/3 cup mayonnaise
  • 1 tablespoon lemon juice
  • 2 teaspoons fresh dill leaves, chopped
  • 1 avocado, sliced
  • 1 Lebanese cucumber, peeled into ribbons
  • 1/2 cup fresh mint leaves
  • 1 cos lettuce heart, leaves separated, torn
  • 8 flour tortillas, warmed
  • Lemon wedges, to serve

    Heat oil in a large frying pan over medium heat. Cook salmon burgers for 4 minutes each side or until golden and cooked through. Cut into thick slices.

    Combine mayonnaise, lemon juice and dill in a bowl. Season with salt and pepper.

    Arrange burger slices, avocado, cucumber, mint and lettuce on a serving board. Serve with dressing, tortillas and lemon wedges.
