1 bunch rocket, ends trimmed

2 ripe tomatoes, coarsely chopped

Salt & freshly ground black pepper

3 teaspoons extra virgin olive oil

2 teaspoons fresh lemon juice
Method

1Place the rocket and tomato in a large serving bowl. Season with salt and pepper.

2Drizzle with oil and lemon juice, and gently toss to combine. Serve immediately with the blue-cheese tortellini.
