Roasted lemon-garlic potatoes

  • 1.5kg cream delight potatoes
  • 2 garlic cloves, thinly sliced
  • 1 teaspoon dried oregano
  • 1/4 cup extra virgin olive oil
  • 1/4 cup lemon juice

    Preheat oven to 150C/130C fan-forced.

    Peel potatoes and cut into wedges. Place in a large roasting pan. Sprinkle with garlic and oregano. Pour over oil, lemon juice and 1/2 cup cold water. Season well with salt and pepper.

    Roast for 1 hour, turning potato halfway through cooking.

    Increase oven temperature to 200C / 180C fan-forced. Roast potato for 15 to 20 minutes or until tops of potato wedges are golden and crisp. Serve.
