Roast smashed potatoes

Ingredients

  • 8 small potatoes, scrubbed
  • 2 tablespoons olive oil
  • Sea salt, to season

Method

    Preheat oven to 180C or 160C fan. Line a baking tray with non-stick baking paper. Microwave or steam potatoes for 5 mins until just tender.

    Place potatoes on prepared tray. Using a fork, lightly squash each potato. Drizzle with oil and scatter over sea salt.

    Bake for 30 mins until golden and crisp.
