Red prawn curry

  • 1 tablespoon Coles Brand pure olive oil
  • 1 onion, chopped
  • 2 tablespoons red curry paste
  • 400ml light coconut milk
  • 400g Coles Brand frozen cooked and peeled prawns
  • 2 cups Coles Brand frozen Australian sliced beans
  • 450g pkt microwave rice, to serve

    Heat oil in a saucepan on medium. Cook onion for 5 mins, or until soft. Add curry paste. Cook for 1 min, or until fragrant. Add coconut milk. Bring to boil. Reduce heat to low. Simmer for 5 mins, or until thickened slightly.

    Add prawns and beans. Simmer for 5 mins, or until beans are tender. Heat rice according to packet directions. Serve prawn curry with steamed rice.
