Red fruit salad

  • 115g (1/2 cup) caster sugar
  • 125ml (1/2 cup) rose wine (such as Brown Brothers Tarrango brand)
  • 2 teaspoons rosewater
  • 700g watermelon, rind removed, cut into 2cm cubes
  • 250g (1 punnet) strawberries, washed, hulled
  • 200g black grapes
  • 150g cherries
  • 150g (1 punnet) raspberries
  • 120g (1 punnet) mulberries
  • Creme fraiche, to serve

    Place the sugar and wine in a medium saucepan over low heat. Cook, stirring, for 3 minutes or until sugar dissolves. Increase heat to medium-high and bring to the boil. Boil, uncovered, without stirring, for 5 minutes or until thickened slightly (see microwave tip). Remove from heat. Set aside for 15 minutes to cool. Add rosewater.

    Place the watermelon, strawberries, grapes, cherries, raspberries and mulberries in a large bowl and pour over cooled syrup. Cover with plastic wrap and place in the fridge for 1 hour or until chilled. Serve with creme fraiche if desired.
