500g fresh raspberries or frozen raspberries

1 cup (220g) caster sugar

2 teaspoons lemon rind, finely grated

1 cup (250ml) lemon juice

Chilled sparkling mineral water (to serve)

Method

1Combine 500g fresh or frozen raspberries, 1 cup (220g) caster sugar, 2 teaspoons finely grated lemon rind, and 1 cup (250ml) lemon juice in a pan over medium heat. Cook, stirring, for 5 mins or until sugar dissolves. Strain.

2Return to pan and bring to boil. Cook for 2 mins or until syrup thickens.

3Pour into a Coles Cook & Dine Glass Bottle with Ceramic Lid. Chill.

4To serve, pour a little cordial into glasses and top with chilled sparkling mineral water.
