Quick bolognese

  • Makes 6 cups


  • 2 tablespoons olive oil
  • 1 large brown onion, chopped
  • 4 garlic cloves, crushed
  • 1kg lean beef mince
  • 1/3 cup salt-reduced tomato paste
  • 2 x 400g cans diced tomatoes
  • 1/4 cup chopped fresh oregano leaves
  • 1/2 teaspoon ground cinnamon

    Heat oil in a large saucepan over medium-high heat. Add onion and garlic. Cook, stirring, for 4 minutes or until onion has softened. Add mince. Cook, stirring with a wooden spoon to break up mince, for 10 to 12 minutes or until browned.

    Stir in tomato paste, tomatoes, oregano and cinnamon. Season with salt and pepper. Bring to the boil. Reduce heat to medium. Simmer, stirring occasionally, for 20 minutes or until thickened.
