Ingredients

90g (1/3 cup) smooth peanut butter

60ml (1/4 cup) water

2 tablespoons soy sauce

2 tablespoons dry sherry

1 1/2 tablespoons apple cider vinegar

1 tablespoon caster sugar

350g pkt chow mein noodles

1 tablespoon peanut oil

1 teaspoon sesame oil

18 cooked prawns, peeled leaving tails intact, deveined

1 red capsicum, seeded, thinly sliced

1 cucumber, halved lengthways, sliced diagonally

160g pkt snow pea sprouts, trimmed
Method

1Whisk the peanut butter, water, soy sauce, sherry, vinegar and sugar in a bowl until well combined.

2Cook the noodles in a large saucepan of boiling water for 3 minutes or until tender. Drain. Rinse under cold water. Return to pan. Add combined oil and toss to coat. Add the prawns, capsicum, cucumber and two-thirds of the snow pea sprouts. Toss to combine.

3Transfer to a platter. Top with the remaining sprouts and serve with the peanut dressing.
