Ingredients

1 large mango

20 medium cooked prawns, peeled and deveined

1/2 small red onion, sliced lengthways

2 tablespoons chopped fresh coriander

1 tablespoon lemon juice

Salt & freshly ground black pepper

100g endive leaves, washed, dried and torn into pieces

Lemon wedges, to serve
Method

1Cut the mango down either side of the stone to remove the cheeks. Peel and slice flesh evenly lengthways.

2Place the mango, prawns, onion, coriander and lemon juice in a bowl. Season with salt and pepper. Toss gently to combine.

3Arrange the endive leaves on 4 serving plates. Spoon the prawn and mango mixture on top. Serve with the lemon wedges.
