Potato with rosemary and prosciutto

Ingredients

  • 2 large potatoes, skin on
  • 2 teaspoons olive oil
  • 4 slices prosciutto, cut into thin strips
  • 2 teaspoons roughly chopped rosemary

Method

    Chop potatoes, into 1cm cubes. Steam until nearly tender. Heat olive oil in a large non-stick frying pan over medium-high heat. Add the steamed potato. As the potato starts to brown, add prosciutto and rosemary. Cook for another 3-4 minutes or until potato is golden brown and the prosciutto is slightly crisp. Serve immediately.
