Potato scallops

Ingredients

  • 1/2 cup plain flour
  • 1/2 tsp baking powder
  • 1 egg
  • 1/3 cup water
  • 1 large potato
  • Light olive oil, to fry
  • Plain flour, extra, to dust
  • Sea salt flakes, to serve
  • Tartare sauce, to serve

Method

    Cook 1 large potato in boiling water until tender. Cool. Thickly slice into 8 slices.

    Whisk flour with baking powder. Make a well in the centre and add egg. Gradually add water, whisking to form a smooth batter.

    Pour light olive oil to one-third of the way up the side of a medium saucepan. Heat to 180C over high heat

    Lightly dust the slices of potato in plain flour then dip in the batter, shaking off excess. Cook in the oil, in 2 batches, for 2 minutes or until golden. Sprinkle with sea salt flakes. Serve with tartare sauce.
