Potato rosti with smoked salmon

  • 10 medium desiree potatoes
  • 50g butter, melted
  • 1/3 cup Coles Brand lite sour cream
  • 2 teaspoons horseradish cream
  • 50g baby spinach leaves
  • 1 tablespoon Coles Brand Australian extra virgin olive oil
  • 200g sliced smoked salmon
  • Lemon wedges, to serve

    Steam or microwave whole potatoes for 4-5 mins, or until par-cooked. When cool enough to handle, peel and coarsely grate. Place in a bowl with butter. Season well and stir to combine.

    Heat a non-stick frying pan on medium. Divide potato mixture into 8 equal portions and shape into patties. Cook for 5-7 mins each side, or until crisp and golden. Drain on a paper towel.

    Meanwhile, mix together sour cream and horseradish cream. Toss together baby spinach and oil. Stack two rosti on each plate. Top with smoked salmon and spinach. Serve with sour cream mixture and lemon wedges.
