Ingredients

750g (about 6) small Red Rascal potatoes (see note)

3 large Pink Lady apples, quartered, cored

2 tablespoons olive oil

2 tablespoons chopped fresh rosemary

900g Pork Rib Roast
Method

1Preheat oven to 180°C. Cut the potatoes into thin wedges. Cut each apple quarter in half lengthways.

2Combine the potato, apple, oil and rosemary in a large baking dish. Season with salt and pepper.

3Season the pork with salt and pepper. Place in the centre of the baking dish. Bake for 35-40 minutes or until the potato and apple are golden and the pork is lightly browned and cooked through.

4Thickly slice the pork and serve with the potato and apple.
