Ingredients

1 tablespoon olive oil

1 medium brown onion, finely chopped

1 (90g) small carrot, coarsely grated

1 (90g) small zucchini, coarsely grated

1 tablespoon chopped fresh sage leaves

3 garlic cloves, crushed

1 (225g) medium granny smith apple, coarsely grated

350g pork mince

1/2 cup low-fat grated cheddar
-
1 egg yolk
-
1 cup fresh wholemeal breadcrumbs

8 sheets filo pastry

Olive oil cooking spray

1 tablespoon sesame seeds

Steamed vegetables, to serve
Method

1Preheat oven to 200C/180C fan-forced. Line a large baking tray with baking paper.

2Heat olive oil in a non-stick frying pan over medium heat. Add onion, carrot, zucchini, sage and garlic. Cook, stirring, for 5 minutes or until onion has softened. Add apple to pan. Cook for 3 to 5 minutes or until softened. Transfer to a large heatproof bowl. Cool completely.

3Add mince, cheddar, egg yolk and breadcrumbs to onion mixture. Season with pepper. Mix well.

4Place 1 sheet filo on a flat surface. Lightly spray with oil. Top with 1 sheet filo. Repeat with oil spray and remaining filo pastry sheets. Spoon mince mixture along 1 long edge of pastry. Roll up pastry to enclose filling. Cut in half. Place rolls, seam side down on prepared baking tray.

5Lightly spray rolls with oil. Sprinkle with sesame seeds. Bake for 25 minutes or until golden and crisp. Stand for 10 minutes. Slice and serve with steamed vegetables.
