125g butter, at room temperature

100g (1/2 cup) caster sugar

1 egg

2 tablespoons golden syrup

2 teaspoons vanilla essence

375g (2 1/2 cups) plain flour

1/2 teaspoon bicarbonate of soda

300g (2 cups) pure icing sugar, sifted

60ml (1/4 cup) milk

150g (3/4 cup) Mars M&M’s

75g (1/3 cup) Mars M&M’s Minis
Method

1Preheat oven to 150°C. Line 3 baking trays with non-stick baking paper. Use an electric beater to beat the butter, sugar, egg, golden syrup and vanilla in a bowl until pale and creamy. Add the flour and bicarbonate of soda. Stir with a wooden spoon until mixture comes together. Turn onto a floured surface and knead gently until smooth.

2Roll biscuit dough between 2 sheets of baking paper until 5mm thick. Use a 6.5cm egg-shaped cutter to cut egg shapes from the dough. Place on the prepared trays. Bake for 15 minutes or until golden. Set aside to cool slightly before transferring to a wire rack to cool completely.

3Place the icing sugar in a bowl. Gradually add milk, stirring with a wooden spoon, until smooth (you may not need to add all the milk). Spread over the biscuits. Arrange M&M’s and M&M’s Minis on top. Set aside for 15 minutes or until set.
