Pita bread bean rollups

  • 4 large (30cm) Lebanese bread rounds
  • 1 x 450g can refried beans
  • 220g (2 cups) shredded cooked lean chicken
  • 1/2 ripe avocado, peeled, sliced
  • 1 large carrot, grated
  • 300g (1 1/4 cups) thick and chunky mild bottled salsa
  • 60g (1/2 cup) grated cheddar

    Spread the bread rounds evenly with the refried beans.

    Divide the chicken, avocado and carrot among the rounds, placing them over 1 half of each round.

    Drizzle with the salsa and then top with the cheese.

    Roll up each round firmly from the filling-covered side. Wrap in plastic wrap or foil and place in the fridge or esky until ready to serve.
