Pink grapefruit fizz

Ingredients

  • 1 1/2 cups caster sugar
  • 1 1/2 cups ruby red grapefruit juice
  • 1.25 litres soda water, chilled
  • 1 ruby red grapefruit, peeled, sliced
  • Ice cubes, to serve

Method

    Combine sugar and 1 1/2 cups cold water in a saucepan over medium heat. Cook, stirring, for 5 minutes or until sugar has dissolved. Add grapefruit juice. Stir to combine.

    Transfer mixture to a jug. Cover. Refrigerate for 40 minutes or until cold.

    Add soda water, grapefruit slices and ice just before serving.
