Pesto gnocchi cups

Ingredients

  • 625g packet fresh potato gnocchi
  • 1/2 x 200g tub basil pesto
  • 1/4 cup finely grated parmesan cheese
  • 12 fresh baby basil leaves, to serve

Method

    Cook gnocchi following packet directions. Transfer to a large bowl. Add pesto. Toss to combine.
  • 2
    Spoon 1/4 cup gnocchi mixture into 12, 1/2 cup-capacity heatproof serving cups. Sprinkle with parmesan. Season with pepper. Top each with a basil leaf. Serve
