Ingredients

1 lemon, juiced

1 tablespoon olive oil

1 garlic clove, crushed

375g penne rigate

100g snow peas, topped, cut into strips

100g sugar snap peas, trimmed, halved

1/2 cup frozen peas

150g low-fat feta cheese, crumbled

1/2 cup mint leaves, chopped
Method

1Combine 1/4 cup lemon juice, oil and garlic in jug. Season with salt and pepper. Set aside.

2Cook pasta in a large saucepan of boiling salted water, following packet directions, until tender. Add snow peas, sugar snap peas and frozen peas to pasta 2 minutes before end of cooking time. Drain. Return pasta and peas to saucepan.

3Add feta, mint and dressing to pasta mixture. Toss over low heat until well combined. Season with pepper and serve.
