Peanut satay sauce

  • Makes 185 ml (3/4 cup)

Ingredients

  • 1 teaspoon canola oil
  • 1/2 small brown onion, finely chopped
  • 1 garlic clove, crushed
  • 1 small fresh red chilli, finely chopped
  • 70g (1/4 cup) natural crunchy peanut butter
  • 125ml (1/2 cup) water
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon balsamic vinegar
  • 1/2 teaspoon brown sugar

Method

    Heat oil in a saucepan over medium heat. Add onion and cook, stirring, for 5 minutes or until soft and golden. Add garlic and chilli and cook for 1 minute or until aromatic. Remove from heat.

    Add peanut butter and stir to combine. Place over low heat. Add water, lemon juice, vinegar and sugar. Cook, stirring, for 3 minutes or until sauce thickens.
