Ingredients

125g butter, softened

1/2 cup crunchy peanut butter

3/4 cup caster sugar

2 eggs

4 medium over-ripe bananas, mashed

1/3 cup milk

1 teaspoon vanilla extract

2 cups self-raising flour

1/2 teaspoon salt

75g softened butter, to serve

1 sliced banana, to serve

2 tablespoons honey, to serve
Method

1Preheat oven to 180C/160C fan-forced. Grease a 9cm-deep, 11.5cm x 20cm (base) loaf pan. Line base and sides with baking paper, extending paper 5cm above all edges of pan.

2Using an electric mixer, beat butter, peanut butter and sugar until light and fluffy. Add eggs, 1 at a time, beating after each addition. Fold in mashed banana, milk and vanilla. Sift over flour and salt. Fold to combine.

3Transfer to prepared pan. Smooth top. Bake for 1 hour to 1 hour 10 minutes or until a skewer inserted into bread comes out clean. Stand for 10 minutes. Transfer to a wire rack to cool. Serve warm, cold or toasted, with butter, topped with banana and drizzled with honey.
