Ingredients

1 1/4 cups self-raising flour

100g butter, chopped

1/2 cup caster sugar

2/3 cup buttermilk

2/3 cup coarsely chopped Coles Brand Australian Almonds

2 x 825g cans Coles Brand Australian Peach Slices in Juice, drained

Vanilla ice-cream, to serve
Method

1Preheat oven to 190C (170C fan-forced).

2Place the flour in a medium bowl. Use your fingertips to rub in the butter until it resembles breadcrumbs. Add the sugar, buttermilk and ½ cup of the almonds and stir until a wet dough forms.

3Place the peach in a 2.5L ovenproof dish. Drop spoonfuls of the dough over the fruit. Sprinkle with remaining almonds. Bake for 45 mins or until golden. Serve with ice-cream.
