Peach and almond cobbler

  • 1 1/4 cups self-raising flour
  • 100g butter, chopped
  • 1/2 cup caster sugar
  • 2/3 cup buttermilk
  • 2/3 cup coarsely chopped Coles Brand Australian Almonds
  • 2 x 825g cans Coles Brand Australian Peach Slices in Juice, drained
  • Vanilla ice-cream, to serve

    Preheat oven to 190C (170C fan-forced).

    Place the flour in a medium bowl. Use your fingertips to rub in the butter until it resembles breadcrumbs. Add the sugar, buttermilk and ½ cup of the almonds and stir until a wet dough forms.

    Place the peach in a 2.5L ovenproof dish. Drop spoonfuls of the dough over the fruit. Sprinkle with remaining almonds. Bake for 45 mins or until golden. Serve with ice-cream.
