Pasta with ham, tomatoes & feta

  • 300g Rollini pasta
  • 1 1/2 tablespoons extra virgin olive oil
  • 2 x 250g punnets grape tomatoes
  • 2 garlic cloves, crushed
  • 200g sliced leg ham, chopped
  • 150g feta, crumbled
  • 1/4 cup small fresh basil leaves

    Cook the pasta in a large saucepan of salted boiling water following packet directions or until al dente. Drain.

    Meanwhile, heat the oil in a large, deep frying pan over medium heat. Add the tomatoes and garlic, and cook for 2-3 minutes or until the tomatoes soften slightly.

    Add the pasta, ham and feta to the tomato mixture, and toss until well combined and heated through. Sprinkle with the basil. Season with pepper to serve.
