Pasta with cheese-stuffed meatballs

  • 1kg Coles Australian 3-star Beef Mince
  • 1/2 cup (50g) packaged breadcrumbs
  • 2 teaspoons dried Italian herbs
  • 4 garlic cloves, crushed
  • 1 Coles Brand Australian Free Range Egg, lightly beaten
  • 220g Coles Brand Cherry Bocconcini
  • 2 tablespoons olive oil
  • 700g ctn tomato & garlic pasta sauce
  • 500g spaghetti
  • Parmesan, grated, to serve
  • Basil leaves, to serve

    Combine the mince, breadcrumbs, herbs, garlic and egg in a large bowl. Season. Shape 2 tablespoons beef mixture around each bocconcini to enclose.

    Heat the oil in a large saucepan on medium-high heat. Cook meatballs, turning, for 5 mins or until browned all over. Add the pasta sauce and bring to a simmer. Simmer, covered, for 7 mins or until meatballs are cooked through.

    Meanwhile, cook the pasta in a large saucepan of boiling salted water until al dente. Drain.

    Serve pasta topped with meatballs, parmesan and basil.
