Orange soy-glazed sweet potato with nori

  • 1kg orange sweet potato, peeled, cut into 5cm long wedges
  • 2 tablespoons vegetable oil
  • 2 teaspoons finely grated orange rind
  • 1/3 cup orange juice
  • 1/4 cup soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon sesame oil
  • 3 garlic cloves, crushed
  • 3cm piece fresh ginger, finely grated
  • 1 tablespoon sesame seeds, toasted
  • 1 sheet nori, torn into small pieces
  • 3 green onions, thinly sliced diagonally

    Preheat oven to 200C/180C fan-forced. Line a large roasting pan with baking paper.

    Place sweet potato in prepared pan. Drizzle with oil. Roast for 45 minutes or until lightly browned and just tender.

    Meanwhile, combine orange rind and juice, soy sauce, sugar, oil, garlic and ginger in a small saucepan over medium heat. Cook, stirring, for 3 minutes or until sugar has dissolved. Bring to the boil. Reduce heat to medium-low. Simmer for 8 to 10 minutes or until thickened. Remove from heat.

    Spoon orange mixture over sweet potato. Toss gently to coat. Roast for a further 5 minutes or until sticky. Sprinkle with sesame seeds, nori and onion. Serve.
